Tofu Vegetable scramble

Ingredients

  • 1 Onion, small, chopped
  • 1 Bell pepper, sliced
  • 8 Mushrooms, washed, sliced
  • 1 block Firm tofu
  • 1 TBSP Garlic powder
  • 1/2 tsp Turmeric
  • 1/2 tsp Black pepper
  • 1 cup Spinach

Instructions

  • In a medium skillet on medium heat, sautee onions for 2-3 minutes. Add water to the pan if onions begin to stick.
  • Add mushrooms and bell pepper to pan, continue cooking for 2-3 minutes until soft.
  • Crumble tofu into pan with vegetables and add spices. Cook for 3-4 minutes.
  • Add spinach to pan and warm.
  • Serve with your favourite whole grain bread.
